T\u00edo Diego is a classic Amontillado from Jerez following the traditional \u201cSolera y Criaderas\u201d system. Firstly, the must from our vineyards grapes in Macharnudo estate ferments. Afterwards, the wine undergoes a biological Ageing in American oak casks for 8 years under a layer of yeast known as the \u201cflor\u201d. This process concludes with another 8 years of oxidative Ageing. The result is a wine with dark amber colour, very complex on the nose with hazelnuts notes, reminding its Ageing under a layer of \u201cflor\u201d. Very dry, full-bodied and balanced palate.<\/p>\n
