Salt-cured Ling Roe from Andalusia.
Delicious salt-cured roe, which one might taste in its full glory sliced, just adding a little bit of extra virgin olive oil and a few almonds.
These are probably the most exquisite roe, very different in taste and consistency from other fish species. It is well digested and has a meaty but tender texture. Despite being salted, it does not mask the original flavour.
The blocks are made covering the roe in salt with a load on top for a certain time, in order to release the water.
For serving, slice the roe, ideally, with an average thickness, sprinkle them with extra virgin olive oil and serve with almonds. Can be eaten with green beans or soya sprouts, too.
The company was established in the heart of Barbate in 2002, a fishing village, which enjoyed its best moments thanks to the sea, as well as the saddest ones.
