From the grapes to the glass, everything is unique. The early harvest of the Palomino Fino grapes, obtaining the mosto yema, or free-run must, which will ferment at low temperatures, and at the end of the alcoholic fermentation, a clear and fragrant wine ready for distillation. Distillation starts at the beginning of November in “Los Arcos” in the Tío Pepe Gran Bodega, using two “Charentais” stills. The unique double distillation process allows to obtain the heart of the distillate, removing the heads and tails resulting in the Holanda de Jerez (wine spirits): a clear, elegant and intensely fragrant eau-de-vie, which ages in old American oak sherry casks following the “Solera y Criaderas” procedures traditional to the D.O.
The result of this magical Ageing process in casks is a Gran Reserva Sherry Brandy of unique character. Lepanto, direct descendant of the Sherry wine, with a matchless personality.
