Luis Pérez Petit Verdot Red Wine from Andalusia.
Petit Verdot varietal Reserva red wine made by the Luis Pérez winery. It comes from careful viticulture, short pruning, spacing out of the bunches and almost no fertilisation; manually harvested in little boxes of no more than 15kgs and selected directly in the vineyard. A pre-fermentative cold maceration is performed at 5ºC with carbon pellets and it is followed by a fermentation process at controlled temperatures from 15°C to 28°C, taking 18 days. The malolactic fermentation and the ageing are done in new French oak casks during 12 months. The wine is neither filtered nor clarified and it is ready to drink after one year of being in the bottle.
It is characterized by a deep cherry colour, very intense and bright. On the nose it is of great complexity and it expresses itself with so uncommon aromas such as stone, ground, truffle, and ink, all wrapped-up with subtle notes of berries. It has a strong power in the mouth and it is complex, with an amazing tenacity and very mature tannin.
This wine pair well with goat and sheep mature cheeses, lamb and goat made in wood-fired ovens, Retinta beef stews from La Janda region, grilled duck magret or spicy casseroles.
