Santi Jordi Margarito y Amapolo Red Wine from Andalusia
A wine born in the Jerez district, in “albariza” soil and with Atlantic influences, 80% Petit Verdot and 20% Graciano. The grapes are manually harvested, with selected bunches, pre-fermentation maceration and further alcoholic fermentation with 20% of stems in casks and wooden vats during 10 days and with a controlled temperature. The devatting is done once the post-fermentative maceration taking 6 days is finished and Ageing, on top of a 30% of fine lees, takes 6 months in French oak (75%) and American oak casks (25%).
A cherry colour with purple reflections and intense depth. Aromatic complexity in the nose, resulting from the limited stabilization treatment, nothing beyond the winter cold, where in a still glass, varietal aromas of Petit Verdot are mixed with the reducing sensations of a fermentation and Ageing with autochthonous yeasts and lees. The elegance of the Albariza soil provides a unique mineral touch, meanwhile wild black fruit such as berry or blackcurrant enhances its prominence. A prolonged aeration either in glass or bottle, provides a singular aromatic complexity, equilibrating sweet spices, black olives, leather and Indian ink precursors that reminds us of the labour done by its maker, where traditional and ancestral practices combine with avant-garde experiences and create a varietal product elaborated and perfectly adapted to warm climate.
Vivid and pleasant on the palate, harmoniously contrasts with the voluminosity and silkiness while passing through mouth, leaving an intense, nice and long-lasting persistence, with memories of the aromas on the nose.
