Luis Pérez Tintilla Red Wine from Andalusia
Red wine from the Tierra de Cádiz PGI from Luis Pérez winery made with 100% Tintilla de Rota variety, harvested at night and handpicked in little boxes of no more than 15kgs. After the first selection of the grape directly in the vineyard, a second selection takes place in the winery.
The harvest is gravity transferred to the vats and 100% destemmed.
A pre-fermentative cold maceration is performed at 5ºC which is followed by a fermentation process at controlled temperatures from 15°C to 22°C, taking 20 days.
Fermentation lees are separated and the most adequate are selected by tasting. After the malolactic fermentation in casks, the wines are aged for 16 months in medium toasted oak casks, wine seasoned in the Vistahermosa estate, between Jerez and Trebujena, surrounded by Albariza soil vineyards. The lees are stirred for 4 months. The wine is not clarified.
Garnet colour with profound depth. Intense and sincere on the nose with blackcurrant, blackberry, nutmeg and chocolate notes. Characterised by sweet tannins which make the wine silky but strong with intense but refreshing aftertaste due to the Tintilla grape characteristic acidity.
The Albariza soil of vineyards give the wine a distinctive character.
This wine pairs well with legumes, nuts, grilled vegetables, light game casseroles, rice and semi-hard cheese. Also in desserts with quince or chocolate.
