24The attack is tasty and well-structured, due to the right balance between acidity and alcohol, with a velvety texture on the taste buds. The high quality of the wine is attested by its long finish and the aftertaste which reminds of the aromas found on the nose. Its polyphenolic footprint and quality ensure a brilliant evolution during its upcoming years of bottle Ageing.
The elaboration is made using selected de-stemmed bunches coming from manual harvest. Temperature-controlled alcoholic fermentation in wooden vats with a 20% of stems during 10 days and devatting after 6 days of fermentative maceration.
