Made only with a strict selection of Palomino grapes coming from Albariza soil in the best estates of Jerez. Fermented, biologically aged under a layer of yeast known as velo de flor; afterwards oxidative Ageing in old American oak casks following the traditional procedures known as “Solera y Criaderas” (since 1884).
