Tío Diego is a classic Amontillado from Jerez following the traditional “Solera y Criaderas” system. Firstly, the must from our vineyards grapes in Macharnudo estate ferments. Afterwards, the wine undergoes a biological Ageing in American oak casks for 8 years under a layer of yeast known as the “flor”. This process concludes with another 8 years of oxidative Ageing. The result is a wine with dark amber colour, very complex on the nose with hazelnuts notes, reminding its Ageing under a layer of “flor”. Very dry, full-bodied and balanced palate.
